Cooling Summer Recipes - Pineapple and Mint Yogurt

Yogurt has calcium, vitamin B-2, vitamin B-12, potassium, and magnesium. Pineapples are rich in Vitamin C and antioxidants

Yield 4-6 Serves

Ingredients:

1/2 cup diced fresh pineapple

1 cup Greek plain yogurt lightly thinned with a Tbsp. water

1 tsp. Thinly slivered ginger

1 green chili seeded and cut into very thin slices

1 tsp. honey

Himalayan salt to taste 2 tsp.

Mint finely chopped

Instructions:

Mix well together and garnish with mint and paprika
