Soups for Health - Chilled Beetroot and Lime Soup

The simple beetroot is anti-inflammatory, high in anti oxidants, good for heart health and in Ayurvedic medicine used to treat Anemia and liver toxicity and for treating Irritability and restlessness. Add to that the freshness of lime and alkaline coconut milk and you have a cool summer treat.

Ingredients
1 large Onion
1 tablespoon Butter
2 tablespoons Olive Oil
500g beetroot, peeled and roughly chopped
500 ml vegetable stock
Salt /Pepper to taste
200ml Coconut Milk
3 limes zest and juice

Instructions
In a large saucepan, sauté the onion in the butter & oil until soft and golden .Add the beetroot, the stock and a teaspoon of salt and simmer for 45 minutes or until the beetroot is tender. Add the coconut milk, lime  juice and zest and simmer for 10 minutes. Liquidize and check the seasoning. To serve, chill and garnish as you fancy!
