Soups for Health - Cold Avocado Soup
Summer increases our levels of “pitta” ,so foods that are alkaline and more cooling in nature help us balance our PH levels.
Avocados are alkaline and high in Potassium, provide large amounts of Monounsaturated Fatty Acids and nutrient dense with several vitamins and minerals.
Cucumbers are cooling and alkaline, hydrating and full of fibre.
Plain yogurt is generally considered a low acid-forming food,
Yields 6 servings
1 avocado firm-ripe
1 and 1/2 english cucumber cut into 2 cm pieces
1 cup Greek plain yogurt
1 tbsp fresh lime juice
3 tbsp chopped fresh chives
1 green chilli
1 tsp Himalayan salt
1/2 cup chilled water
1/2 cup diced mango
-Peel and pit the avocado. Using a blender take all ingredients and blend until smooth.
