Creamy Sweet Potato Soup

Soup for Breakfast? Start the day with a warm soup of sweet potato the Ayurvedic super food that pacifies all three Doshas. Dill is hot in nature, useful for increasing the appetite and improving digestion.

Serves 4

Ingredients

3 cups Organic Vegetable Broth

2 Sweet Potato (small, peeled and diced)

2 stalks Celery (diced)

1/2 tsp Sea Salt

2 tbsps Fresh Dill ( chopped)

1 cup Organic Coconut Milk (canned)

1 1/2 tbsp Lemon Juice

Directions

Heat the vegetable broth in a pot and bring to a simmer while you prepare the remaining ingredients.

Add the sweet potato, celery and salt. Cook until the sweet potato is fork tender, about 15 minutes.

Stir in the dill, coconut milk, lemon juice and nutritional yeast. Adjust the salt as needed and cook for another 10 minutes.

Divide into bowls and enjoy! For more protein add a 1/2 cup quinoa. more flavour add nutmeg and a coupe of cloves.
