Semolina Porridge / Greiß Brei

Warm, sweet and moist qualities are the best to kick start your day. The ‘sweet’ taste of grains provides the body with cellular nourishment. This dish especially pacifies both Vata and Pitta but also Kapha (omit ghee, less milk and add ginger powder). Good for all seasons. Fruit and grain together is not good combining for digestion but is ok if you use dried sweet fruits.

Serves 2

Ingredients

1/4 cup Semolina

1 tsp Ghee

1 tbsp Almond Meal

1 cup Water (Boiling)

1 1/2 cups Unsweetened Almond Milk

4 Cardamom Pods (or 1/2 tsp powder)

3 Pitted Dates (chopped)

1 tbsp Chia Seeds (Soaked over night)

2 tbsps Pomegranate Seeds

1 tbsp Maple Syrup (To taste)

Directions

In a small pot melt the ghee and roast the semolina. In a few minutes it will turn golden, now add the almond meal. Slowly add the boiling water. Once the mixture clumps together add the almond milk and smoothen. Now add the sliced dates and cardamom.

In about ten minutes the mixture will thicken check for flavouring Add maple syrup to taste. Add toppings like pomegranate seeds, soaked chia seeds, raisins or soaked sliced almonds and or/ poached spiced apples. Enjoy!
