Autumn Beet & Plum Salad

As the weather turns cooler in an effort to manage both Vata and Pitta this salad is beneficial to all Doshas when consumed correctly. Beets cleanse the liver and blood by moving bile, so it's an ideal food to reduce excess Pitta and grounding and calming for Vata. Adding Plums is an additional way to manage bone health as an imbalance in Vata can cause joint pain. This bitter astringent and sweet fruit is perfect also with antioxidants and rich in Potassium can help reduce sodium levels in the body managing blood pressure.

Ingredients

2 Beet (Boiled)

2 Plum

1/4 cup Mint Leaves

1 tbsp Tahini

2 tbsps Water

2 tbsps Extra Virgin Olive Oil

2 tbsps Lemon Juice

1 tbsp Maple Syrup

Sea Salt & Black Pepper (To taste)

Peel and boil beets for 25 minutes. Cool and cut into thin slices. Cut the plums the same way. Prepare the dressing.

Mix the tahini with slightly warm water, add lemon juice, olive oil, maple syrup, salt and pepper and shake well. Drizzle the dressing at the very end. Garnish with mint leaves and serve.
