Soups for Health - Apple Parsnip Soup

Yield : 4-6 Servings
Time: 45 minutes
600g Parsnips peeled and roughly chopped
3 Apples, Peeled and cored and chopped
4 shallots, finely sliced
2 garlic cloves, crushed and chopped
Olive oil
1 1/2 litre vegetable stock
handful of chives, chopped
Heat the oil in a medium sized saucepan
Add shallots and garlic and cook over medium heat for about 5 minutes until softened. 
Add the parsnips, apples and stock. Simmer for 30-40 minutes until it is soft enough to mash easily.
Garnish with chives and drizzle with truffle oil.
